Update the currency list for vendors to rely on the standard currency list

Purpose: To change the currency list from a short hardcoded list to a searchable dropdown list

As a staff person
I want to be able to assign the proper currencies to Vendors in the Organizations app
So that I can easily apply the correct currency in orders

Scenarios

1. Scenario 1
   • Given the Create/Edit screen in the Organizations app
   • When an Organization is designated as a vendor and the Vendor Information shows
   • Then change the list of available currencies from a hard coded dropdown list to the same standard list used in Settings/Tenant/Language and Localization/Currency
   • With a search box at the top, so that the currency can be searched and multi-selected
2. Scenario 2
   • Ensure test coverage is 80%+
