For receiving and check-in of single-title POLs, only allow Item status = In process

Purpose: To remove the In transit and Available options from the Item status choices when receiving or checking in a piece.

As a staff person receiving or checking in a piece
I want to only see the Item status of In process
So that the piece's item record connects properly to the automatic circulation and requests processes

Why? To trigger fulfillment of requests or movement of the piece to the appropriate location, it must be checked in at a circulation desk (not the acquisitions "check in") and have the item status updated automatically by FOLIO

Scenarios

1. Scenario 1
   • Given the Receiving and Review screens
   • When the user is viewing the item status
   • Only display the value "In process" (so no checkbox is needed)
2. Scenario 2
   • Given the Check-in screen
   • When the user is viewing the item status
   • Only display the value "In process" (so no checkbox is needed)
3. Scenario 3
   • Ensure automated testing coverage for this new code is 80% plus and confirm with screenshot

NOTE: Item status handling/screen UI for multi-title receiving/check-in in a separate story, UIOR-376 - Parked for now until the revised receiving/check-in screens are available

Per Craig, add a MOD story to make sure it's protected in the API layer
