Check-in item status still defaults to "Received"

Overview:
As part of UIOR-182 we moved from using the item status of "Received" to "In process" for items that have been received or checked-in. However, the item status drop-downs in the check-in flow still have the "Received" status and actually default to that status. See attached screen shots.

Actual Behavior:
The check-in flow defaults to "Received" for item status

Expected Behavior:
The check-in flow item status drop-down should only have "In Process" status.

Acceptance Criteria:

• See expected behavior.
• Tests have been updated to check for this.
