Optimistic locking: test update flow via mod-quick-marc

Purpose/Overview:
Spike https://issues.folio.org/browse/MODQM-166 defines the changes needed to support the optimistic locking feature via mod-quick-marc for updating Inventory Instances/Holdings. This story is aimed to test the whole update flow with modifications on Rancher env or locally.

Requirements/Scope:

1. Test update flow for Inventory Instance
2. Test update flow for Inventory Holdings
3. Define additional stories if needed

Acceptance criteria:

• update flow for Inventory Instance is working as expected
• update flow for Inventory Holdings is working as expected
• additional stories created
